- Recioto della Valpolicella is produced using the appassimento method, where harvested grapes are dried on mats or in special drying rooms for several months. This process concentrates the sugars and flavors, leading to a rich, sweet wine.
- Unlike other sweet wines, Recioto della Valpolicella undergoes a controlled fermentation process that is stopped early to retain natural sugars. This results in a sweet wine with a relatively high alcohol content, usually around 12-14%.
