  • Sparkling: minimum 90% Negro Amaro + maximum 10% of other grape varieties allowed for cultivation in the region for the monovarietal rosato label. Minimum 85% Chardonnay or Fiano or Pinot Bianco + maximum 15% of other non-aromatic white grape varieties allowed for cultivation in the region for the monovarietal label. Minimum 70% Chardonnay + maximum 30% of other non-aromatic white grape varieties allowed for cultivation in the region.

  • Rosato: minimum 90% Negro Amaro + maximum 10% of other grape varieties allowed for cultivation in the region for the monovarietal label. Minimum 75% Negro Amaro + maximum 25% of other red grape varieties allowed for cultivation in the region. Minimum ageing for Riserva – 24 months of which – minimum 6 months in oak.
  • Liquoroso: minimum 85% Aleatico + maximum 15% of Malvasia Nera di Brindisi and/or Malvasia Nera di Lecce and/or Primtivo for the monovarietal label.
